After hitting several barb villages, there has been no defence, at what stage do the barb villages actually fight back/ have defenders.

Barbarian villages will never fight back, however they have base defense. Barbs are building them selves randomly and when they build a wall their base defense get higher and your troops will start dying and you will have to send more until your force becomes strong enough to overpower the wall it self.

If you ever encounter troops in a barbarian village then the troops are probably from a near by player sending them as support to hide them from his enemy or to spike the barb (spiking barbs: supporting barb with troops so other players can't farm it).

What is Base defense? (source: wiki) [h=3]Base defence[/h] Every village has a base defense. This means that every village defends itself, even if no troops are in the village. The idea is that very small attack forces, like 1 or 2 spear fighters, will die even without defending troops. The base defense is increased by upgrading the wall.

So, to actually answer your question correctly, they will never fight back seriously, unless someone supports them. However, once they build a wall, they will have a base defense even without troops, and sending too few troops will result in you losing some.
